This Ginjo sake from Shirakabegura Brewery is produced using the traditional "kimoto zukuri" process which is a slow and rigorous brewing process that dates back to the Edo period.

Its smooth and round aroma profile, wrapped in a silky texture, reveals notes of apple, pear, and dried fruit, as well as a light acidity and a tasty umami that fade into a clean and clear finish.

Shirakabegura Kimoto Ginjo can be enjoyed both chilled and at room temperature, and goes well with all white meats and fish-based dishes in sauce.

Takara Shuzo, famous for its mirin, shochu and sake production, has been making all its premium sakes for more than a century at the Shirakabegura brewery in Nada (Hyogo), which produces in a completely traditional and modern way.
