Chichibu Paris Edition 2023 is an olfactory and gustatory symphony of remarkable finesse. Its nose reveals elegant peat mingling with nuances of white fruit, aromatic herbs and green almond, evolving with aeration towards medicinal, vanilla and herbaceous notes, offering a balanced and delicate aromatic palette. On the palate, this creation is lively and balanced, with peat asserting itself from the outset. In the mid-palate, green, lemony and fruity flavors reveal themselves, evoking a field of barley, fruits such as Williams pear and a hint of menthol. The long, delicate finish offers a perfect synthesis of nose and palate aromas, with sweet nuances of lime pie and basil, barley sugar, agave honey and coconut milk, enhanced by licorice and chocolate tones on the aftertaste.

This exceptional edition, imagined by Ichiro Akuto, is a meticulous blend of 9 malt whiskies from different barley varieties (including some hand-malted). Chichibu ages between five and seven years in bourbon, quarter cask (chibidaru) and hogshead casks, creating perfect harmony and an intense, fruity, slightly medicinal expression.

Each bottle of this 2023 edition is randomly assigned to an order and does not allow you to choose one of the five available labels.

The distillery

The distillery Chichibu

Ichiro Akuto, grandson of the founder of the Hanyu distillery, decided in 2007 to build a new whisky distillery in the town of Chichibu, 100 kilometers northwest of Tokyo.

Located near the old Hanyu distillery, the local climate with harsh winters and hot & humid summers, gives a certain maturity to the whiskies produced in Chichibu despite their relative young age (production started in 2008).

A small distillery, Chichibu produces in small quantities, but the remaining stocks of Hanyu, Kawasaki and Karuizawa, now exhausted but having been housed there, have allowed Ichiro Akuto to compose rare and exceptional blends. In 2020, the first of Ichiro Akuto's dreams came true with the first 10 year old single malt distilled, aged and blended in Chichibu and a long history beginning to be written.
